So, what is a boxty? 

Having never been to Ireland and being the crazy researcher/planner/over thinker that I am, I consulted every blog/website/travel guide I could find for dinner recommendations. There were SO many that I became overwhelmed. I didn't expect Ireland's food scene to be booming. I remembered my dear friend Jess had been to Dublin the year before me, so I asked her for a dinner recommendation instead.

All she said was "go to Gallagher's Boxty House. Don't look it up, just go." If you don't know me well, let me explain that this is no easy feat for me. I make lists. I make more lists from the lists. I pin. I save on Instagram. I email bloggers to get the best tips, see the best photos and figure out every single meal of my trips. (Ok, maybe I'm not that extreme, but I'm pretty close.) However, I love Jess and didn't want to disappoint her. So, I took her advice and found myself tucked into a cozy table at Gallagher's my second night in Dublin. I ordered the chicken boxty and a pint of the house beer and tried not to panic.

Can I just say, I could not have been happier that I didn't look it up before hand. A boxty, it turns out, is a potato pancake, similar to a crepe, that is wrapped around a filling and has a sauce on top. I was in heaven. It was warm and comforting and the perfect antidote to the chill in the air. It made me want to not look up every meal beforehand and just be surprised (almost!). So, thank you Jess, for showing me that I can let go of the reigns a little and enjoy something for what it is - a delicious meal of potato heaven with no expert reviews or Instagram feeds attached.
